Always has to start with taco dip cause it’s a delicious compliment to any margi and is pretty easy to whip up (not to mention the base is cream cheese-yum)!!
2 blocks Philly cream cheese
8 oz. medium salsa (I use Trader Joe’s from the deli section)
2 cups of sharp cheddar cheese
1 bunch of green onions
1 can sliced black olives
Roma tomatoes, diced
In a medium-sized bowl, fold the salsa into softened cream cheese to create the bottom layer. Trial and error suggests to fold the salsa in about 1/3 of the container at a time. This will prevent the mixture from becoming to “soupy”. Spread the cream cheese/salsa mixture evenly on a flat tray. Then add cheese and layer with veggies: chopped green onions, olives and tomatoes.
You can add any protein or fancy veggies and serve with the corn chip of your choice!
I love a Trader Joe’s lightly salted blue corn chip. Mix up a margi and voila!
