Real Quick…

To say I’m a mediocre cook is more than generous.  I’m great at following a recipe-and am always on the lookout for quick, easy and healthy!!  After having a super tasty veggie flat-bread pizza at Indaco, I thought I would try to copy…for a first try, it turned out pretty delish!!!

Ingredients:

1 package flatbread NAAN from Trader Joe’s
Olive Oil
Kosher Salt
Black Pepper
Red Onion (thinly sliced)
1 large Squash
1 large Zucchini
1 package Trader Joe’s Burrata (mozzarella filled w/ cream) unreal!!!

~Brush Naan with Olive Oil & dust with Kosher Salt
~Bake till crispy at 350 (about 10 minutes)
~Thinly slice red onion, squash, zucchini
~Layer veggies on crispy Naan
~Cut and place Burrata on top of veggies
~Cork and pour a huge glass of Regaleali Rose (also from Indaco)
~Top with salt, pepper or spice of your choice (I love Cavender’s all-purpose Greek Seasoning)!
~Bake until cheese and veggies are tender

It took about 18 minutes for the cheese to melt and the veggies to get tender.  YUMMIE!  I might add basil next time…we shall see.  The beauty of this is that you can use any veggie you have on hand and/or add a protein!  bon appetit!!!

Did anyone watch the World Cup this weekend??!  We watched Argentina vs. Bosnia/Herzegovnia last night after Father’s Day dinner for my Uncle.  The soccer was so entertaining and so was my family trying to piece together the commentary!  Good Stuff!
